Austin Steak Night

Flank steak, jalapeño chimichurri, impossibly crispy potatoes, and a very good excuse to have people over.

I’ve made this dinner three times now, and somehow it gets better every time. And may I say, it’s a crowd-pleaser.

Ranch waters for the grown-ups, Mexican Cokes for the kiddos, guacamole and chips to start. Then steak, super-crispy smashed potatoes with lots of lime and crema, charred broccolini and scallions, and a big old salad. To finish: vanilla ice cream with warm dulce de leche, a pinch of flaky salt, and toasted pecans. No complaints here.

The great thing about this dinner is that you can do almost all of it in advance, which makes it a goodie if you’re going to be out all day: say, at a football game, with pre- and post-game parties to attend.

Drinks out, and the steak platter.

I set the table that morning, except for the flowers (and candles), which I leave in the AC for as long as humanly possible. I washed the lettuce, threw together the chimichurri and vinaigrette, made the beans and put them in the fridge until it was time to reheat them (hold the cotija until serving). I boiled the potatoes, smashed them with the bottom of a glass, let them cool, and tucked them into the fridge, ready to go straight into the oven that evening.

Lime goes into nearly everything, so stock up. More than you think you need.

And get yourself a good squeezer, because there is an awful lot of squeezing involved.

The menu

Ranch waters, Topo Chico with lime, and Mexican Cokes. Guacamole, chips, and a very spicy salsa. Grilled flank steak with jalapeño chimichurri, flaky salt and lime. Super-crispy smashed potatoes with lime, crema and chives. Black beans with cilantro and cotija. Charred broccolini and scallions. Butter lettuce and radicchio with avocado, soft feta and lime vinaigrette. Vanilla ice cream with warm dulce de leche, flaky salt and toasted pecans. Barolo. Good company.

A lesson learned the hard way.

Squeeze all your limes and get the tequila ready ahead of time, then add the Topo Chico just before everyone arrives. Much better than making each guest mix their own ranch water.

On the table

We’re so lucky to still be eating outside. Woven chargers, a fork and knife on a folded napkin, low flowers down the middle, and loads of candles. Votives in clear glass, a twisted taper or two, and a hurricane.

Low flowers, set in the morning.

By the time the steak comes off the grill, it’s dark, and I’m using just about every candle we own so our guests can actually see their dinner. It’s wonderful.

What to do ahead

In the morning, or the day before: salt the steaks and put them in the fridge, uncovered. Make the chimichurri and vinaigrette, wash and dry the lettuce and radicchio, and wrap the leaves in a clean kitchen towel in the fridge. Boil the potatoes, smash them on an oiled sheet pan, let them cool, and refrigerate them on the pan until you’re ready to roast. Make the black beans, too; they only get better as they sit. Hold the cotija until serving. Toast the pecans and set the table. Oh, and squeeze a lot of limes for the ranch waters.

An hour before dinner: take the steaks out of the fridge. Heat the oven to 450°F. Take the potatoes out of the fridge and drizzle them with more olive oil (a lot, for crispiness) and salt. Mix the tequila and lime juice for the ranch waters in a pitcher and chill it. Get the grill ready. Reheat the beans gently.

When people arrive: potatoes into the oven. Top the ranch water pitcher with Topo Chico as the first guests arrive, pour it over ice, and put out the guacamole and chips. Grill the steak while everyone is having a drink. Char the broccolini and scallions.

Just before sitting down: let the steak rest for 10 minutes, then slice it thinly against the grain. Finish the potatoes with lime, crema and chives. Add cilantro and cotija to the beans, dress the salad, and put everything on the table.

After dinner: scoop the ice cream, pour over warm dulce de leche, and finish with toasted pecans and flaky salt. Serious winner of a dessert here.

The steak

I took cooking lessons a few years ago and learned that meat will tell you when it’s ready to be flipped. If it’s still sticking to the grill a bit, then it needs more time.

Salt in the morning

You need

  • 2 flank steaks, about 1½ pounds each
  • Kosher salt and black pepper
  • Olive oil
  • Flaky salt and lime wedges, to serve
  • Chimichurri (below)

Then

  1. SaltSalt the steaks well on both sides in the morning and refrigerate them, uncovered. Take them out an hour before you cook them.
  2. HeatHeat the grill to high. Pat the steaks dry, rub with a little olive oil and grind over some pepper.
  3. GrillGrill for 4 to 5 minutes a side, until well charred. Pull the steaks off at 120 to 125°F in the thickest part; they’ll rise to about 130°F, medium-rare, as they rest.
  4. RestRest for 10 minutes on a board. Slice thinly across the grain.
  5. ServeLay the slices on a platter, spoon over the chimichurri, scatter with flaky salt and tuck in the lime wedges.

Boil and smash in the morning

You need

  • 2½ lb small Yukon Gold potatoes
  • Kosher salt
  • About ½ cup olive oil
  • 1 lime
  • Flaky salt
  • ½ cup Mexican crema or sour cream
  • A small bunch chives, finely chopped

Then

  1. BoilPut the potatoes in a pot of cold, well-salted water, bring to a boil, and cook until a knife slides in easily, 15 to 20 minutes. Drain and let them steam dry for a few minutes.
  2. SmashPour a few tablespoons of the oil onto a sheet pan. Spread out the potatoes and press each one flat with the bottom of a glass. Rough edges are what you want. If you’re making them ahead, let them cool, then cover the pan and refrigerate until you’re ready to roast.
  3. RoastHeat the oven to 450°F. Drizzle the rest of the oil generously over the potatoes and salt them well. Roast for 35 to 45 minutes (a few minutes more if they’ve come straight from the fridge), flipping them once with a thin spatula halfway through, until deeply golden and crisp at the edges.
  4. FinishStraight out of the oven, grate over the lime zest, squeeze over the juice, and scatter with flaky salt. Spoon the crema on top and finish with chives.
